Lemon Pappardelle Pasta with Roasted Tomato’s

Ok foodies,

This meal was so simple to make.  Takes a little time because of roasting the tomato’s, but trust me, it’s well worth the wait!  I basically got home, cut about 7 “On the vine” tomato’s in half, placed them on a baking sheet with a couple cloves of garlic and tossed them in the oven at 350 degrees.  I waited about 15 minutes and then added an artichoke heart on top of each tomato. Then I went and watched some tv, did laundry, etc.  You need to roast these at least for 30 minutes, but I did them for an hour (as my fiance wasn’t home yet).

When the time was up, I brought a stock pan up to boil, tossed in my Lemon Pepper Pappardelle Pasta which I get from Trader Joe’s and is one of my favorites.  This only needs to boil for 8 minutes to be aldente!  Do not overcook.  I then took the tomato/artichokes out of the oven and put them in a mixing bowl, added about 2 tablespoons olive oil, the juice of 1 full lemon, some chopped up parsley and basil, salt and pepper to taste.  Then I drained the noodles and mixed in this mixture and VIOLA!  I topped with some more fresh parsley and a side of french bread.

No butter, no preservatives, no cooking a pasta sauce!!  I would recommend adding capers if you like them.  I had forgotten to pick them up at the market, but those would have topped off the dish nicely.

      Why thank you! And I actually got them from Saturday’s Farmer’s Market! I have a great tomato guy there and he always refers me to his besties!! :-)

    This looks delish! As a vegetarian I totally appreciate that there’s no meat! I’m gonna have to try it for dinner now :)
